Our two-hatted, fine dining restaurant, Wickens at Royal Mail Hotel, is an immersive dining experience aiming to bring all your senses to life. From the food and drink, to the view of Mount Sturgeon, your time in Wickens is designed to mesmerize.
However, for those that don’t want to drink alcohol and would rather not miss out on one of the many elements of their degustation, they can now enjoy a creative drink pairing.
Our sommelier, Matthew Lance, and Executive Chef, Robin Wickens, put their heads together to create the Garden match. Designed to spark your imagination and taste buds simultaneously, this on trend match aims to create a memorable drinking experience.
Premium botanical sapiir manufactured in Melbourne by Brunswick Aces and distilled non-alcoholic spirits by Seedlip are complemented with juices, extracts, teas and infusions made from produce harvested from the Royal Mail’s organic kitchen garden. The food on your plate is grown and harvested from the same garden, creating a synergy that cannot be, dare we say, recreated from a bottle of wine.
Think rabbit, baby carrots and carrot & hemp puree, served with a refreshing ice tea including Japanese pepper and Spice Seedlip.
Or a tomato gelee and crayfish icecream, enhanced by a lavender sour with Brunswick Clubs Blend.
It is dessert that truly takes the cake though (no pun intended). Yellow peaches, almond sponge, berries and meadowsweet is matched with a nectarine spritz and Brunswick Hearts blend. While a strawberry, sweet woodruff panna cotta and rose hip are joined at the table by a fresh basil tea with Garden Seedlip.
Given the seasonality of our kitchen garden, these menu items are only available while the season prevails. It begs the question, what will the autumn and winter bounty bring to the match? Perhaps rosemary, mint and all the citrus the Dunkeld micro climate can ensure.
