February often delivers some of the hottest days of the year. It can be a fun way to round out the warmer months, with parks and beaches filled with a buzz. Or it can leave us wondering when the heat will ever relent. Either way, a chilled bottle of wine can be the exact remedy we need.
The two Royal Mail Hotel sommeliers – Peter Dillon and Matthew Lance – were set the task of finding the perfect summer drop in the 28,000 bottle cellar. What emerged are two great summer wines, plus the Parker Street Project “Wine of the Month”.
Such is the Royal Mail’s dedication to and passion for our wine collection, our General Manager is also a Sommelier! Alongside managing the hotel itself, Peter, works daily with the 28,000 bottle cellar. Prior to joining us in Dunkeld, Peter travelled the world managing cellars and wine lists for restaurants, hotels and cruise ships.
Matthew is the Restaurants Manager and Sommelier of the Royal Mail Hotel, overseeing the daily operations of both Wickens at Royal Mail Hotel and the Parker Street Project. His love of wine has developed over an exciting career working for Gordon Ramsay restaurants in London and the Shangri La in Beijing, to name a few.

Peter’s Summer Choice – 2017 Crawford River Rosé, Australia – $28
A blend of 70% Cabernet Sauvignon and 30% Semillon, this rosé is a light drop with easy drinkability. Fresh, crisp and delicious, with a nose of fresh strawberries, this wine comes from one of Victoria’s best wineries.

Matthew Lance’s Summer Choice – 2017 Christophe Chablis, France – $48
This is a clean and classic Chablis, with apple fruit tones, sharp tangy acidity and a mineral finish. It is highly recommended, especially at this great price.

Parker Street Project’s “Wine of the Month” – 2014 Domain de la Roche Paradis Syrah, France – $55
Winemaker Yann Menager uses a minimal intervention winemaking style, that lends to small production. It is a medium to full bodied Syrah, that has been very popular in Parker Street Project.
