The Royal Mail Restaurant offers a unique, nature-based cuisine focusing on the highest quality organic and heirloom produce and the latest culinary techniques. Multi-course tasting menus follow nature's cue to change with the seasons and are inspired by the hotel's natural surrounds.
A wide variety of specialty organic and heirloom vegetables are produced by the restaurant's kitchen gardens each year. Orchards and an olive grove surrounding the hotel provide stone fruit, apples, pears, berries, figs, quince and olives. Fresh eggs are collected daily from free-range laying hens and resident bees provide honey and assist with pollination.
Each day two tasting menus are prepared, based on produce harvested from the kitchen gardens, collected from the wild and sourced from local artisan producers;

Dining at the Royal Mail Restaurant requires time; time to experience a range of ingredients, temperatures and textures; to leave behind preconceived ideas; to experience a gastronomic journey highlighting the perfection of each ingredient. The duration of a menu is three to four hours.
Alternative tasting menus are offered to diners visiting the restaurant on consecutive evenings.
The Royal Mail Hotel's wine program is characterised by an uncompromising dedication to providing one of the most comprehensive and varied collections of
wine in Australia, with the aim of providing depth of vintage at all levels.
The award-winning Royal Mail cellar houses an extensive selection of Australian and international wines, including Australia's leading collection of
Bordeaux and Burgundy.
The wine list focuses on wines from the collection that have been carefully stored in the hotel's temperature and humidity controlled cellar and are presented at their optimum drinking age and condition. A member of the Royal Mail wine team is always available to assist with the selection of a special bottle, or to design a personalised wine experience to accompany either of the tasting menus.
Diners may elect to be served accompanying wines and a sommelier
is always available to suggest the perfect selections uniquely suited to each
of the dishes of the day. Accompanying wines with dinner is $120 per person.
